The Luxor is also a good place to stay and if you are a budget the Flamingo Hilton has some pretty good deals if you catch a break. The pool at the Hard Rock is pretty nice and during the summer they have local bands play poolside. Mandalay Bay is a pretty nice hotel. I usually end up booking the Venetian more often because of it's central location. The Burger Bar at Mandalay Bay though is one of my favorite places to eat.
